菠萝包 Melon Pan

今天特别想吃自己做的包包。
就做了Alex Goh老师的菠萝包。
不太满意做出来的样子。
颜色烤得不美。表面上的菠萝皮也杆得太厚了。
下次应该薄些。
还好面包本身是柔软好吃的。
菠萝皮也很酥脆。
我也在面包材料中加入了黄豆粉。
这韩国的黄豆粉很香。
看来我明天可以用它来做一个土司。
好久都没有做土司了。
唔。。。四四方方的土司,说起来,现在就很想念了。

甜面包团:
  • (A) 100克高筋面粉,70克滚水
  • (B) 300克高筋面粉,90克面粉,30克黄豆粉,80克糖,6克盐,9克即用酵母粉
  • (C) 175克冷水,60克冷蛋
  • (D) 50克牛油
  1. 将(A)的滚水加入面粉中拌匀成团。然后盖起来,冷却后放入冰箱冷藏最少12小时。
  2. 将(B)拌匀,加入(C)搅拌成粗团。加入冷藏了的(A)拌匀。
  3. 加入(D)搅拌成光滑及有弹性的面团。
  4. 让它发酵40分钟。
  5. 将面团分割成所须的重量,撮圆。
  6. 让它松弛10分钟,即可备用。
Sweet Bread Dough:
  • (A) 100g bread flour, 70g boiling water
  • (B) 300g bread flour, 90g plain flour, 30g soy bean powder, 80g sugar,6g salt, 9g instant yeast
  • (C) 175g cold water, 60g cold eggs
  • (D) 60g butter

Method:

  1. Add the boiling water from (A) into flour, mix well to form a dough. Cover and set aside tocool. Keep it into refrigerator for at least 12 hrs.
  2. Mix (B) until well-blended. Add in (C) and knead to form a rough dough.
  3. Add in (A) and knead until well-blended.
  4. Add in (D) and knead to form a elastic dough.
  5. Let it proof for 40 minutes.
  6. Divide the dough into required weight and mould it round . Let it rest for 10 minutes and ready to use.

菠萝皮材料:

  • (A) 100克牛油, 100克糖粉
  • (B) 1个鸡蛋
  • (C) 220克面粉, 10克奶粉
  • 将(A)混合拌匀,加入(B)搅拌至光滑,然后加入(C)搅拌成团,休面再分割成每粒30克备用。

Ingredient For Polo Pastry:

  • (A) 100g butter, 100g icing sugar
  • (B) 1 egg
  • (C) 220g flour, 10g milk powder
  • Mix (A) until well-blended. Add in (B), cream until smooth. Add in (C), mix until well incorporated. Divide it into 30g each.

菠萝包做法:

  1. 将甜面团分割成每粒60克,搓圆,松弛10分钟。
  2. 把菠萝皮杆成圆片,再将甜面团包裹起来,让它发酵45分钟。
  3. 扫上蛋液,以180度炉温烤15分钟。

Melon Pan Method:

  1. Divide sweet bread dough into 60g each and mould it round. Rest for 10 minutes.
  2. roll out polo pastry into round sahpe then wrap the sweet dough with polo pastry. Let it proof for 45 minutes.
  3. Egg wash the surface and bake at 180C for 15 minutes.

  2. 红豆妹妹,面包是很软,外皮脆脆的。是我很喜欢的面包。黄豆粉在韩国商店买的。韩国人用来调酱料用的。日本和台湾商店也可以买到。
    其实真正的食谱不加黄豆粉。如果没有黄豆粉,改用奶粉。

  8. Ann, Singapore got lots of yummy food. I still miss the famous bread shop call Bread's talk. Am i right? hehe... so long dint have bread there liao lo. Am going this Sept :)
