Four Tier Chocolate Layer Cake

如今,老公这一代,13个兄弟姊妹能和睦共处,不为上一代的恩怨而互相怒目相向;

** original recipe from Donna Hay

Ingredients:

  • 125ml water
  • 60g butter, chopped
  • 2 tablespoons cocoa, sifted
  • 1 cup (150g) plain flour, sifted
  • 1/2 teaspoon bicarbonate of soda, sifted
  • 1 cup (220g) caster sugar
  • 1 egg
  • 1/4 cup (60ml) buttermilk
  • 1/2 teaspoon vanilla extract
  • chocolate cream cheese frosting: (i used my own method)
50g butter, softened, 180g cream cheese, 100g icing sugar, sifted, 80g chopped dark chocolate

Method:

  1. Preheat oven to 150'C fan-forced.
  2. Place the water, butter and cocoa in a saucepan over medium heat and stir until the butter has melted.
  3. Place the flour, bicarbonate of soda and sugar in a bowl, add the cocoa mixture and whisk to combine.
  4. Add the eggs, buttermilk and vanilla and whisk to combine.
  5. Divide mixture between 2 lightly greased 12cm round cake tins lined with non-stick baking paper. Bake for 40-45 minutes or until cooked when tested with a skewer.
  6. Allow to cool in the tins for 5 minutes. Turn out onto wire racks to cool completely.
  7. While the cake is baking, make the cream cheese frosting. Melt the dark chocolate using double boiling method.
  8. Place the butter and cheese in the bowl of an electric mixer and beat for 6–8 minutes or until pale and creamy. Add the icing sugar and continue mixing.
  9. Add in melted chocolate and beat for a further 6–8 minutes or until light and fluffy.
  10. To assemble, slice the cakes in half horizontally. Place one cake layer on a plate and spread with one quarter of the frosting. Repeat with remaining layers and frosting. Decorate as desired.

  2. is totally understandable that is hard to have a mother & daughter relationship between MIL & DIL, this is rarely happened. I tried my best trying equal treatment for my mum and mil, but is tire of 1 way thinking, my 100% contribution cannot even compare to her own daughter's 1% so, just retain cordial relationship for me is the best solution for current situation.
