鸡蛋火腿面包 (Eggs & Hams Bread)

天气一热,我最大的反应和烦恼就是吃不下饭。

然后餐桌上就会摆上许多怪怪的,不像晚餐的晚餐。

粥水是最常见的,因为容易吃和消化。

水果和沙拉也成为我的正餐。

往往,糖水如番薯汤,绿豆水,黑糯米也给摆上了。

面包加浓浓的洋式蘑菇汤,简单,清淡,也是孩子们的最爱。

做这面包原本也是想当晚餐的,可是孩子一放学就吃了两个;又说要带去学校,所以,计划被迫改变。

不怕,就来个即食面加炒肉碎,也挺方便的。

最重要,大家吃得下就开心了。

材料:

  • (A) 250克高粉, 6克砂糖,2克酵母,80克鲜奶,70克鲜奶油,17克蛋液,5克牛油
  • (B) 15克奶粉, 30克砂糖,3克盐,2克酵母,20克蛋液,5克牛油
  • (C) 2个蛋,6片火腿,1小匙美奶滋,适量黑胡椒粉和香草。
  • 馅料做法:蛋煮熟,剥壳,切成块状。火腿切细长条。把美奶滋和黑胡椒粉加入蛋和火腿中拌匀,备用。

面包做法:

  1. 所有材料(A)除牛油外,依序加入盆內,用低速搅拌成面团。
  2. 加入牛油,然後搅打至面团结成一起即可,约2-3分钟。
  3. 盖上布发酵2。5个小时。
  4. 将发酵好的(A)加入(B)(牛油除外),打至面团结起成一圆球。
  5. 加入牛油,继续打至面筋擴展,就是面团可以拉成薄膜狀即可。
  6. 蓋好,发酵10分钟,分割成8份,每份60克。滚圆,松弛15分钟。
  7. 把面团稍微擀压成圆片,放在烤盘上再次发酵至双倍大。
  8. 扫上蛋液, 填上馅料,撒上香草。
  9. 烤炉预热180度,烤12-15分钟即可。

Sweet Bread Dough:

  • (A) 250g bread flour, 6g sugar, 2g instant dry yeast, 80g milk, 70g whipping cream, 17g eggs, 5g butter
  • (B) 15g milk powder, 30g sugar, 3g salt, 2g instant dry yeast, 20g eggs, 5g butter
  • (C) fillings: 2 hard boil eggs, chopped into small cubes, 6 slices of cooked ham, sliced into long strips, 1tsp mayonnaise, black pepper to taste, dried parsley flakes to garnish.
  • To prepare fillings: mix together eggs, hams with mayonnaise & season with black pepper powder. Set aside.

Method:

  1. Add all ingredients except butter in (A) in the mixing bowl. Mix well to form a rough dough.
  2. Add in butter and knead to form a dough around 2-3 mins. Let it proof for 2.5-3 hours.
  3. Mix (A) with (B) except butter to form a soft dough. Add in butter and beat till elastic.
  4. Rest the dough for 10 mins. Divide the dough into 60g each and mould it round . Rest again for 15 minutes (makes 8).
  5. roll out dough into round flat shape and arrange into baking tray.
  6. Let it proof for another 45 minutes. Egg wash the surface and top with some fillings and sprinkle with some parsley flakes.
  7. Preheat oven at 180C and bake for 12 -15 minutes.

  4. 我喜欢这样的馅料, 看了都很开胃。 但是那个面团真的要发酵那么久噢? 2.5个小时, 不会发酵过度吗?

  7. These look so tempting! Bookmarked already! The bread flour is available at Woolsworth? No idea whether there's Woolsworth in Perth but my girl said that she finally saw bread flour there in Melbourne.
