肉丝餐包 (Pork Floss Bun)



在爱和自由里看到这面包好吸引我,于是就动手做了这包包。

和老师的手作相比,我的包包真是出不了厅堂叻。

呵呵。。。人比人气死人的。还是自己跟自己比赛就好了。知道自己努力了,有进步了也就开心了,不是吗?

改了一点食谱,因为我最近买了几种粉,很好用,所以非加不可。

食谱参考这里

材料:

  • 270克高筋包粉,50克杂谷混合粉,80克低筋面粉,5克即发干酵母,60克细砂糖,5克盐,16克奶粉,40克鸡蛋,220克水,40克牛油
  • 馅料:肉松适量
  • 表面装饰:沙拉酱
做法:
  1. 将所有材料,除牛油以外,放入盆中打至面团表面光滑。
  2. 加入牛油打至扩展阶段,即可拉出薄膜状,放温暖处进行基础发酵。
  3. 发酵结束后,将面团分割成35克一个,滚圆后松弛15分钟。
  4. 将松弛后的面团擀成椭圆形,将肉松放在上面,自上而下卷成橄榄形。
  5. 将面团放在烤盘上,放温暖湿润处进行最后发酵。
  6. 最后发酵结束,表面刷蛋液,挤上沙拉酱。
  7. 入预热180℃的烤箱,中层,上下火,12-15分钟。

Sweet Bread Dough:

  • 270g bread flour, 50g mixed grain flour, 80g low protein flour, 16g milk powder, 60g sugar, 5g instant dry yeast, 220g water, 40g eggs, 40g butter
  • filling: pork floss
  • garnishing: mayonnaise

Method:

  1. Add all ingredients except butter in a mixing bowl. Mix well to form a smooth dough.
  2. Add in butter and knead to form a soft and beat till elastic dough.
  3. Rest the dough for an hour or until it rise double in size.
  4. Divide the dough into 35g each and mould it round . Rest again for 15 minutes (makes 20).
  5. roll out dough into oval shape and wrap in some fillings.
  6. seal the edge and shape it nicely then arrange into baking tray.
  7. Let it proof for another 45 minutes. Egg wash the surface and squeeze some mayonnaise on top of the bun.
  8. Preheat oven at 180C and bake for 12 -15 minutes.

这一整桶的包包是我们的“食粮”,我们的食量是不是有点夸啊?

以下这几张照是从kakulas Bros的网页了拷贝过来的。这是我常去的店。只要你能念出材料,在这里你都能找到。粉料,香料,奶制品,果类,豆类,咖啡,谷类样样都有。带家婆去买干果时,他眼睛睁得大大的,一直说好多东西买哦。这里的东西都是自己打包的,要多少买多少。不过,如果一次过买几种粉的话,要记得带支笔去,自己记录好什么粉,不然我回到家一定不知道谁打谁了。很佩服店里的店员,他们是怎样分辨的呢?透视眼?

    打一份面团就能做出这么多“食粮”,还真不赖。

    今天我也做了面包,就是做太少了,一个宵夜就被吃完了,明天的早晨没着落了。

  9. Jane, Thanks for your offer to bring me ramekins, but that is too much, ramekins are too fragile and heavy to bring all the way from Perth, heheehe..I saw in Goldcoast too but the price is too expensive after the conversion. Anyway, thanks again.
