味噌栗子小蛋糕 (chestnut & miso cake)


原以为没有时间上贴的;可是实在热得不能的天气把我和来自远方的亲人给镇住了出游的脚步。
只是出门吃了个午餐和在商场走走后就回家了。
乘着空档做了这简易的食谱。
第一次看见这食谱时,真的就马上想动手。
因为我好好奇,味噌,香芋和栗子结合起来的味道。
可是手中没食材,也就不了了之。
结果就这样,一拖再拖,直到现在才有机会试试。

下午清理冰箱时,见里面还有一点点芋头泥,秤一下,有110克,比食谱多了一点分量。
再秤一下剩下半包的甜栗子,那是我买来闲着时吃的零食;也有120克。
啊!成了!就做这个食谱吧!
其实这蛋糕口感像松糕也像我们的发糕。
甜中带点咸,又有芋头和栗子的香味,很不错的小糕点。

食谱取自Okashi Sweet Treats 的chestnut & miso cake (我稍微改了点)

材料:
  • 130克 普通面粉,1茶匙发粉 (过筛)
  • 70克 甜菜糖,40克 味噌,100克 芋头泥
  • 90克 水,30克 葡萄籽油
  • 100克 熟栗子(切半)
做法:
  1. 把甜菜糖和味噌混匀。加入芋头泥,拌打均匀。
  2. 加入水和油,拌匀。
  3. 将粉料加入,搅拌均匀即可。
  4. 最后加入栗子,拌匀。
  5. 把面糊倒入杯子里,大火蒸15分钟即可。
Ingredients:
  • 130g unbleached plain flour, 1tbsp baking powder (sifted)
  • 80g beet sugar, 40g soy bean paste (miso), 100g yam paste
  • 90g water, 30g grapeseed oil
  • 100g store bought chestnuts (cut into halves)
Method:
  1. Combine beet sugar and soy bean paste and mix well.
  2. Add yam paste and beat to combine.
  3. Add water and oil tomix well.
  4. Add flour mixture and fold in with a spatula.
  5. Fold in chestnut and pour batter into paper cups.
  6. Steam over high heat for about 15 mins. Remove from steamer and leave to cool.

  1. 近来我也是翻了Okashi的食谱,有好几个食谱我都很喜欢。。。哈哈。。会不会我把她的食谱都一一做完,害了她的书卖不出去:)

  6. Hi Jane, I also thought that wont be seeing you on the blog for a while. I really can't imagine how these cupcakes taste like with the use of miso. This chef is so creative! I've been seeing some bloggers mention abt this Okashi book & it must be a very good book.
