- 一碗蛋 (只取蛋黄,约5-6粒)
- 一碗椰浆
- 一碗糖 (我只用7分满)
- 平底钢锅1个
做法:
- 热锅,倒入1/3白糖,煮成褐色糖浆。
- 把剩余的糖加入蛋黄中拌匀,再加入椰浆拌打均匀即可。
- 把(2)加入(1)中,不停搅拌。(这时糖浆会结块,无须担心)
- 继续以中小火不停搅拌至糖块完全溶解即可。
香辣螺饼材料:
- 250克面粉,1大匙粘米粉,1/2大匙咖哩粉,1小匙辣椒粉,1/2小匙胡椒粉,适量剁碎的咖喱叶,1/4小匙盐
- 1个蛋黄,1小匙油,1/2碗椰浆(若太干可以加多一点)
做法:
- 把全部材料倒在一起拌匀。
- 把蛋和椰浆混匀再一点一点的加入(1)中拌成面团。休面15分钟。
- 捏起一小块面团,在模里压扁。
- 再把压扁了的面团卷起成螺形。 重复至面团完全弄完为此。
- 热油,把螺卷放入油里以中小火炸至金黄,捞起沥干油份。
- 放凉后再装罐。
Ingredients:
- 250g all-purpose flour, 1tbsp rice flour, 1/2tbsp curry powder, 1tsp chilli powder, 1/2tsp pepper, 1/4 tsp salt
- 1 egg yolk, 1tsp oil, 1/2cup coconut milk (if too dry can add a little bit more)
Method:
- Mix all the flour ingredients together and add in the yolk, oil and coconut minlk.
- Mix well to form a smooth dough and let it rest for at least 15 mins.
- Pinch out a little bit of dough, using the utensil, press the small dough with your thumb to form the shell shape. Repeat until all done.
- Heat oil in medium heat - 325 f and fry the sea shells until brown and crispy.
- Drain on kitchen towel.
