抹茶长崎蛋糕 (Matcha Castella Cake)



昨天下午做了一个抹茶长崎蛋糕。
但是在翻面时,把刚刚烤好的蛋糕给翻跌了。
好好的一个蛋糕给砸坏了。
我当时只有一个感觉,极度伤心。
很想很想大声的哭,但是哭不出来。
走出厨房让自己冷静下来后,还是得面对现实,把那一半还可以吃的,切片。
还好儿子的两个朋友在,3个男孩一会儿帮我把那乱七八糟的蛋糕给搞定了。
没有看到那烂烂的蛋糕,心理比较好过一点。
今天,我不死心,重新再给自己做一个。
可惜我一个人,不能把制作过程录影;只能拍一些准备过程。
学习做这个蛋糕之前,我也是抱着战战兢兢的心情去做的。
但是尝试了一次,两次。。。就觉得也不是太难的。
尽量不要去把这蛋糕复杂化,那你就能得心应手了。
把所有材料打发至乳白状非常重要。
我用8-10 分钟,速度4,打发我的面糊。
继而再以1号慢速拌打,一面加入溶化牛油和味霖,直到完全融合成一。
如果你曾经试做而失败了,那么请别灰心。
我相信世上无难事,只怕有心人。
记得了,不要觉得它是很难做的,它其实不会比做戚风和泡芙难。

前几次的食谱都用汉语。
答应了几个朋友翻译成英语的;但是我最近一直苦于没有电脑用。
之前用的电脑送给了姑姑。
其实家里有两架电脑,因为软件不同于我一直在用的电脑,所以做起事来,事倍功半。
就连我的照片都没有处理和打上我的名字。
既然之前的长崎没有翻译好,
那就用今天的上英文食谱吧。
这样算是交差了。


Prepare Your Ingredients:  250g eggs, 80g fine sugar, 50g honey, 75g milk, 10g cake emulsifier, 55g high protein flour, 90g low protein flour, 10g matcha powder, 50g melted butter, 10g mirin

(it is a bit lumpy when started to mix in all ingredients but don't worry as it will turns out good after beating. Scrap the side and bottom twice in the mixing progress)

Warm milk, honey and cake emulsifier and mix through. Pour all ingredient into mixing bowl except melted butter and mirin. Beat all with speed no. 4 until batter is thick and creamy white (about 8-10 mins). To try whether the batter is ready, just write an "O" on the surface and if the "O" remain unchanged in 10 seconds, that means it is ready (this is the method i used when i did sponge cake). Changed to speed 1 and Add in melted butter and mirin slowly. Mix well till all combined.


Pour in prepared mould and bake in preheated oven at 160c for 55 mins - 1 hrs.
Take out from oven. Cover with a clean baking paper on top then with another baking pan. Turn upside down so that now the top surface become bottom. This is to get a real smooth surface. Cool slightly and wrap the cake nicely. Chill in the fridge overnight before serving.

    Ya, what you mean by wam milk, honey and SP? You meant warm these 3 items together or use warm milk? Thanks.

  9. 娇娇,是咯,很伤心。这个蛋糕还是吃原味的好。抹茶香是香,但盖过了蜜糖和味霖,不怎么喜欢。那个模兔子应该买得到。我的是sonia送的,所以不用买。

  10. Sonia, to let the honey and SP melted easily, I just warm it and stir well. But not used immediately after warming. Just set aside for a while before pouring in with others ingredients.

    Bernice, 那就快做吧。味霖不是加很多,所以味道不会太重。

  12. I followed your tips and make little changes on the wrapping, i bake again today and it look ok from the outside and now storing in the fridge, will cut tomorrow morning. But this time the cake was slightly shrink on the sides after cooled down, I don't know why.,, long way to learn. I really admire your skill making such a beautiful Castella.

  18. Hi Jane, I'm so careless. I'm pretty sure you've given me a website b4 to get to know better abt making castella cake but after looking for 1/2 hour, I still couldn't retrieve the website. Can you pleaseeeeeee give it to me again. Ah, actually I forgot whether it is to show how to make the cake or how to prepare the mould. Thanks.
