Figs & Almond Cheese Cake (无花果杏仁芝士蛋糕)


哟。。。终于回来了。
终于提起重若千金的双手从新做家务;
从新回到这里。
和朋友们一样,出门转了一圈,也回家乡吃到胖胖回来。
回来后每天都只想着睡觉;
结果就陈天对着厨灶发呆。
又回到今天要煮什么?吃什么的现实生活。
孩子们也都回到学校上课,一切如常。
一个人在家,安安静静的也很舒服。
不想烹饪,阅读和韩剧填补了我的时间。
每日和朋友们的晨运也是我最享受的时刻;
几个女人叽叽喳喳,嘻嘻哈哈的,也解了我的乡愁。
上星期朋友生日,我虽然还是很懒,但终究还是做了个简单的蛋糕给他。
虽然不是很费力和考功夫的蛋糕,
但胜在省事省时,也不错好吃。
下次谁要是懒惰又逼于无奈要做蛋糕,
这个蛋糕食谱应该还派得上用场。
食谱参考: Dailydelicious ~ strawberry swirl Cheesecake
Base:
  • 90g Digestive biscuits, crushed
  • 40g Almond nuts, crushed
  • 55g Melted butter
Cheese Cake Batter :
  • 250g Cream cheese
  • 200g Plain yogurt (i use greek yogurt)
  • 100g Whipping cream
  • 70g  Fine sugar
  • 2 tbsp honey
  • 7g Gelatin sheets (or powder)
  • 15ml cold water
  • 60ml Apple juice / Water
Method:
  1. Place the digestive biscuits and almond nuts in food processor and make into crumbs. 
  2. Mix (1)  with the melted butter and pour into the cake tin, pressing them into the base of the cake tin and refrigerate it for 20-30 minutes or until set.
  3. Bloom the gelatin sheets in cold water.
  4. Beat the cream cheese with sugar and honey until very soft and smooth. Pour in yogurt and stir to combine.
  5. Pour the whipping cream and lemon juice into the bowl, whisk to combine.
  6. Heat the gelatin bowl in the microwave heat for 30 seconds or until hot, then stir until gelatin completely melt. Stir in juice and mix well.
  7. Pour the gelatin into the cream cheese bowl, whisk to combine.
  8. Pour the Cheesecake batter into the prepared cake pan and refrigerate it for 4 hours or until firm.
  9. Decorate with fresh figs and almond nuts and served.

Just to high light to you: - method 5 - indicate lemon juice; but ingredient did not mention lemon juice and amount.. however, I have tried this cheese cake and it's lovely. Thank you again.
