巧克力海綿蛋糕

那天看见Sonia 家的巧克力海綿蛋糕,很吸引我。于是今天就用这配方做了这简单又好吃的蛋糕。老实说这几天吃什么都没有味道的。但是孩子们一口气能吃下两片的蛋糕,应该不会差。喜欢它够稳定,烤后不容易塌陷。 今天把材料减半,只做了一个6寸圆活模。

材料:
  • 沙拉油18g、可可粉11g
  • 全蛋(冷)100g、蛋黃16g、細砂糖70g、糖浆10g
  • 盐1g、低筋面粉53g、小苏打粉1/2小匙
  • 牛奶10ml
做法:
  1. 准备锅子把沙拉油倒入煮温,煮到油有紋路时就把可可粉倒入锅中搅拌熄火。
  2. 把全蛋、蛋黃、細砂糖、盐加入用加班机快速打发均勻。
  3. 搅拌后蛋液会比较白且糖盐均已溶化,再來把糖浆加入用中速來搅拌。
  4. 之后把過篩的低粉、小苏打粉倒入面糊中,慢速拌匀至无粉粒状即可。
  5. 最后加入牛奶拌匀,倒入6寸圆模。
  6. 预热烤箱180度,烘焙约25-30分钟或完全熟透。
  7. 出炉后,马上倒扣待凉。
  8. 完全凉后即可切块享用。

Ingredients:

  • 18g corn oil, 21g cocoa powdwe
  • 100g whole eggs, 16g egg yolk ,70g fine sugar,10g glucose
  • 53g cake flour, 1g salt, 1/2tsp baking soda
  • 10ml milk

Method:

  1. Heat up corn oil (low flame), turn off flame, add in cocoa powder and mix well & set aside.
  2. Beat whole egg & egg yolk, sugar and salt on HIGH speed till foamy.
  3. Add in glucose and continue beat on MEDIUM speed till double in volume and ribbon-like.
  4. Sift cake flour and baking soda, beat on LOW speed till mix well.
  5. With a spatula, take 1/3 of the batter and mix it with no (1), fill in this mixture with the remaining batter, combine well.
  6. Last add in milk and mix well.
  7. Pour batter in a 9” round pan and bake for 35mins at 180C.
  8. Remove from the oven and invert the pan immediately. Let cool completely before unmould.
