Challah面包

这个星期将是教会年历的终结。紧接着而来的就是降临期。
降临期是教会礼仪年历的开端;也是教友们忏悔及为将来作准备的时期。
往往我们都把这时期误解成准备身心灵为庆祝耶稣的来临或圣诞。
虽然如此,也不为过;至少在这一个月多的日子里,教友们都尽量做补恕及悔改为迎接救世主作好准备。
因为是年终,所以这两个星期的教会每日读经都在强调末日的征兆;福音则是耶稣训导人们悔改。
还记得1999年即将结束前,当许多的人在准备迎接千禧年的到来时,更有许多的人在惶恐着世界的末日。到处可以听见人们谈论着世界如何进入黑暗和恐怖的末日。
死确实是让每个人都害怕的字眼;有些人甚至避而不谈,觉得不吉利。
但是,死也是我们必需面对的事实。不论你喜不喜欢这一天必将来临,即使秦王也逃不过。
既然逃不了,就得面对,就得准备。
我心里明白也知道,不用问末日是何时;因为没有人会给我一个真实的答案。
我只不断的告诉自己,必将死的那一刻。。。就是我的世界末日了。
说到死,有点灰吧?

谈谈别的;因为圣经常常提到犹太人,所以对这民族感兴趣。后来,才知道原来漂亮的 challah 是犹太人在安息日食用的面包;更是庆祝宗教节日和迎接新年的一种面包。

Challah在希伯来语里是是面包块的意思。是犹太人把做面包的第一块面团献给教堂的传统,而challah指的就是这块面团了。

虽然challah历史悠久,但是时至今日,它还是犹太人最具代表性的佳节食物。

传统上这种编花面包会被分成12份,代表以色列的十二个部落。

Challah在犹太人的新年会被编成圆形即圆满的意思。而大量的蜜糖则代表甜蜜美好的一年。

三股辫子却代表着真理,和平和美丽。

它也常常被编成盘旋而上的螺旋形阶梯以表示自己的信仰,借此,期望更靠近神。

Challah 的表面往往被撒上种子,例如罂粟籽或芝麻,象征玛纳(圣经里古以色列人在经过荒野时所得的天赐食粮)。

因为年关将尽,于是提起勇气尝试了这认为是和宗教渊源很深而且给人一种“高高在上”的challah 面包。

Challa 配方来自《The Bread Baker's Apprentice》

  • 高粉 4杯(18盎司,510克)
  • 细砂糖 2大勺(1盎司,28.3克)
  • 盐 1小勺(盎司)
  • 即时酵母 1+1/3小勺
  • 橄榄油 1盎司,28.3克
  • 蛋(大号) 2个,打散
  • 蛋黄 2个,打散
  • 水 198克-255克
  • 蛋白,扫面用
  • 芝麻或罂粟籽少许 (我用的芝麻)

做法:

  1. 把高粉、细砂糖、盐、酵母,拌匀。
  2. 混匀橄榄油、蛋、蛋黄和200克的水。
  3. 加入粉中,拌匀,(如有需要可以再加入剩余的水但是注意不要太湿,否则很难整形)。
  4. 打至面团可以拉出薄膜即可。(面团应该是柔软和湿润)。室温发酵1小时。
  5. 发酵结束,将面团分割成45克/个,滚圆后松弛15分钟。
  6. 松弛后的面团擀成椭圆形,翻面后压薄底边,自上而下卷成条状,搓成两头略细中间略粗的长条。
  7. 编6股辫。编好的面包,放温暖湿润处进行最后发酵。
  8. 发酵结束,表面刷蛋液,手指沾水后沾白芝麻,然后把白芝麻印到面包上。
  9. 预热180℃的烤箱,中下层,25分钟。

In ancient times Jewish women set aside a small piece of dough, called challah, for the Temple priest (kohen) whenever they made bread.

After the destruction of the Holy Temple in Jerusalem, Jewish women began to burn a small piece of dough (challah) whenever they made bread in remembrance of the priest’s portion.

Traditionally, the loaf is usually braided.

Challah also served on Jewish New Year (Rosh Hashanah). It is normally be rolled into a circular shape (Turban Challah) to represent the cycle of the year. Sometimes the top is brushed with honey or sprinkle with sugar in honor of the "sweet new year."

Ingredients: (make 2 challah)

  • 510g High Protein flour
  • 2 tbsp fine sugar, 1tsp salt
  • 1 + 1/3tsp instant dry yeast
  • 28.3g olive oil
  • 2 big eggs + 2 yolks
  • 198g - 255g water
  • egg white for egg wash
  • sesame seeds (optional)

Method:

  1. In a bowl combine eggs, yolks, oil and water together. Whisk untill the liquid ingredients are well mixed.
  2. Mix (1) into flour, sugar, salt and yeast. Beat together until get a soft dough.
  3. Continue kneading or beating if u are using a mixer until the dough becomes soft and elastic.
  4. After the dough been kneaded, place into a greased bowl and cover with a plastic wrap and allow to rise till double in size.
  5. After the dough has risen, cut into 12 portions weight 45g each. Roll in round and rest for 15 mins.
  6. Flatten the dough and roll out the dough into long rope.
  7. Now connect 6 pcs of dough at one end. Start to braid. (Formula to braid 6 ropes: starts from left, 1 to 3, 5 to 1, 6 to 4, 2 to 6, 1 to 3 & repeated with the same formula). Once the dough has been braided, pinch the end and tuck them under the braid.
  8. Place on a greased baking tray and allow challah to rise again till double in size.
  9. egg wash the surface and sprinkle with sesame seeds.
  10. Bake challah in preheated oven at 180C for 25mins or until the bread is deliciously browned. Cool on a wire rack.
