Challah 圣诞花环 (Challah Christmas Wreath)

再来一个圣诞花环!

还是用challah配方,但是这回编了一个4股的花环送给钢琴老师。

老师好开心哦。

另一个还是照旧编了6股的长型面包;今早做french toast,一次过解决了大大长长的面包。

刚刚统计一下,我一个星期里已经做了8个challah 面包了。

看来,我家吃面包的量越来越恐怖了。

Challa 配方来自《The Bread Baker's Apprentice》

  • 500克高粉, 50克 细砂糖,1小匙盐, 4克干酵母,
  • 28克橄榄油, 90克蛋 +35克蛋黄 ( 打散), 200克 水
  • 蛋白,扫面用
  • 芝麻,蔓越梅少许 (可以不加)

做法:

  1. 把高粉、细砂糖、盐、酵母,拌匀。
  2. 混匀橄榄油、蛋、蛋黄和水。
  3. 加入粉中,拌匀,(如有需要可以再加入剩余的水但是注意不要太湿,否则很难整形)。
  4. 打至面团可以拉出薄膜即可。(面团应该是柔软和湿润)。室温发酵1小时。
  5. 发酵结束,将面团分割成10份。滚圆后松弛15分钟。
  6. 松弛后的面团擀成椭圆形,翻面后压薄底边,自上而下卷成条状,搓成两头略细中间略粗的长条。
  7. 编6股辫一个,4股辩一个。编好的面包,放温暖湿润处进行最后发酵。
  8. 发酵结束,表面刷蛋液,手指沾水后沾白芝麻,然后把白芝麻印到面包上。
  9. 预热180℃的烤箱,中下层,25分钟。

Ingredients: (make 2 challah)

  • 500g High Protein flour, 50g fine sugar, 1tsp salt, 4g instant dry yeast
  • 28g olive oil, 90g , 35g yolks, 200g water
  • egg white for egg wash
  • sesame seeds, dried cranberries (optional)

Method:

  1. In a bowl combine eggs, yolks, oil and water together. Whisk untill the liquid ingredients are well mixed.
  2. Mix (1) into flour, sugar, salt and yeast. Beat together until get a soft dough.
  3. Continue kneading or beating if u are using a mixer until the dough becomes soft and elastic.
  4. After the dough been kneaded, place into a greased bowl and cover with a plastic wrap and allow to rise till double in size.
  5. After the dough has risen, cut into 10 portions. Roll in round and rest for 15 mins.
  6. Flatten the dough and roll out the dough into long rope.
  7. Now connect 6 pcs of dough at one end. Start to braid. (Formula to braid 6 ropes: starts from left, 1 to 3, 5 to 1, 6 to 4, 2 to 6, 1 to 3 & repeated with the same formula). Once the dough has been braided, pinch the end and tuck them under the braid.
  8. Braid the balance of 4 doughs using formula 2 to 3, 4 to 2, 1 to 3, 2 to 3 ... and so on.
  9. join the 2 ends together to form a circle.
  10. Place on a greased baking tray and allow challah to rise again till double in size.
  11. egg wash the surface and sprinkle with sesame seeds.
  12. Bake challah in preheated oven at 180C for 25mins or until the bread is deliciously browned. Cool on a wire rack.

  6. 最近懒到不行,可能是天气太热吧,(我会为最近找借口的)但是很想试这有意义的面包。好吧,将他列入要做的项目咯!太心动了这面包
