印尼沙拉&虾酱炸鸡 Gado Gado (indonesian vegetable salad) & Shrimp Paste Fried Chicken



星期天在外吃了印尼的gado gado;
我的儿子是超级喜欢马来风味的食物的。
所以我隔天买齐了材料自己弄来吃。
送了朋友一盒,她也很喜欢。
打电话来说我给他的酱料不够。
哈哈。。。我答应她下星期再做给她吃。
就这样我顺道做了很久很久都没做的炸鸡。
晚餐吃土耳其面包加炸鸡和沙拉,很勉强的搭档;但很受欢迎哦。

My Style of Indonesian Gado Gado:

Ingredients For Peanut Sauce:
5 shallots, 1 garlic, 8 red chilies, 1 inch galangal (grind into smooth paste)
5 kaffir lime leaves (finely chopped)
1 tbsp tamarind pulp, 1/2tsp shrimp paste, 100g sugar/ gula melaka, 1tsp salt, 3tbsp peanut butter, 1 can ayam brand satay sauce
60g peanuts, fried/toasted and coarsely grind
Ingredients For Vegetable Salad:
3 squares tofu, deep-fried and cut into cubes
150 g beansprouts, blanched
1 cucumber, quartered and sliced thinly
1 carrots, quartered and sliced thinly
150 g long beans (i substituted with french beans) , cut into 3 cm length
150 g cabbage, blanched, and squeeze out water
3 hard boiled eggs
Method:
  1. Heat oil in a wok. fry chilies, shallots and garlic,  till fragrant.
  2. Add in shrimp paste, continue frying for a minute and add in palm sugar and tamarind and continue cooking the spices until fragrant and becomes darker.
  3. Combine in kaffir lime leaves and stir well.
  4. Pour in satay sauce and add in peanut butter.
  5. Add some water if it is too thick.
  6. Remove the paste and keep in airtight container till serving.
  7. To serve, Pour some peanut sauce on top of vegetables.




Shrimp Paste Chicken:

Ingredient:


1 kg Chicken wings or whole chicken cut up in big chunks

Marinate:
1tbsp Shrimp Paste
1tbsp Sugar or more depending on your taste
1 1/2 tbsp Grated Ginger 
1tbsp rose wine (玫瑰露酒)
1tbsp Water to dilute the mixture

Frying Batter:
1 part plain flour and 1 part rice flour (e.g. 100g flour + 100g rice flour)

Method:
  1. Wash and clean chicken wings thoroughly.  Pat dry.
  2. Mix  the marinate sauce until shrimp paste is completely dissolved.
  3. Marinate chickens for 3 hours or overnight in refrigerator.
  4. Remove marinated chicken from refrigerator and let it go back to room temperature.
  5. Mix batter ingredients (flour and rice flour) together.
  6. Coat chicken with flour.
  7. Heat up frying oil in a pot.  Fry chicken till golden brown. Served hot.

  1. Wow, I love this! Gado-gado is something I must order when I see it on the menu. I have not made it before and will try your recipe. The chicken looks very good too!

  2. I must try the gado gado next time. Actually I never have gado gado in my life b4 haha... But I'm sure I will like it by looking at the ingredients.
    The shrimp fried chicken is a bit like the one I made in my nasi lemak post. Yes..love the shrimp paste chicken very very much.

  5. I don't think I have ever eaten real gado gado before, something like Rojak right? I am ok with Rojak but my family members never like Rojak, slim chance to try out. I think they are ok with belachan fried chicken .
