圣诞杂果蛋糕(christmas cake)

终于都放假了。
好好的睡到自然醒。
醒来时两个孩子已经吃完早餐,在“努力“耕耘他们的电动游戏。
自个儿吃早餐实在不是滋味;要怪只能怪自己迟醒,赖床。
今天送儿子去打网球后,我和女儿去接她的同学,3个女人逛街去。
中午再一起会合,在附近的商场午餐。
后来遇到和我一样在等儿子的妈妈,
就这样我们等了儿子后,一起吃午餐,聊天,再到下午茶。
聊啊聊的,一个下午就这样溜走了。
匆匆的到图书馆借了书就回家。
原来一天是这么的短,还来不及做些什么就傍晚了。
不过偶尔这样无所事事,做些不关紧要的东西,也是一种享受。
不用和时间赛跑,不管晚餐要在几点做好,不理下一个小时要做些什么?
真的觉得很轻松自在。
我,忙碌了一阵,真的就是需要一点这样的生活~无聊
也不知道何时会再上来报道?
以防万一,还是先预祝大家:圣诞快乐,过个平安夜!

Ingredients :

500g mixed dried fruit
300ml orange juice
125ml brandy
125g softened butter
2 eggs
125g muscovado sugar
125g plain flour 
40g ground hazelnuts
1/2 tsp baking powder
1 tsp mixed spice
1/2 tsp ground ginger
1 tsp cinnamon powder

Method:
  1. Combined mixed fruits, orange juice and brandy in a bowl and stir to combine. Cover, set aside to macerate overnight or at least 8 hours.
  2. Preheat oven to 150C. Beat butter and sugar till light and fluffy.
  3. Add egg one at a time and beat well.
  4. Add in ground hazelnuts and dried fruits (1).
  5. Sieved in plain flour, baking powder and mixed spices. Stir to combine.
  6. Pour into 2 round 5" baking tins, buttered and lined with 2 layers of baking paper, bake until cakes are golden and skewer withdraws clean (about 90mins). 
  7. Cool on a wire rack in tins for 30mins. Turn out cakes and cool completely.
