很快的学校又要放长假了。
很多人都安排着出国游玩或回乡探亲。
我的朋友中也有不少准备着,倒数着,回家过圣诞。
通常我们都会先来几个聚会才分道扬镳。
上星期日,我们又到一朋友家中欢聚。
虽然只是简单的午茶会,但是孩子和大人们都尽兴而归。
我做了这绿茶蛋塔。
绿绿的还真有点圣诞气氛呐。
可惜我们不是搞圣诞聚会而是"老公们的wii game"聚会。
自己很喜欢这乳酪味的塔皮。
但是尝试了多种口味的蛋塔后,我还是钟情于最原始的蛋塔。
塔皮材料:
- (a) 200克面粉,35克玛森芝士粉,适量盐
- (b) 40克糖粉(过筛)
- (c) 125克无盐奶油
- (d) 1个蛋黄, 1/2 小匙香草精
- (A)150ml 水加60克糖,煮沸,待凉。
- (B)3个蛋 加50克淡奶水,拌匀。
- (C)5克绿茶粉加1大匙热水拌匀。
- 把凉了的(A)加入(B)再把(C)加入,搅匀过筛2 次,直到没有泡泡为止。
- 将(a) 过筛加入 (b)混匀。
- 加入 (c) 搓成粒状。
- 加入(d)拌成面团,用保鲜膜包好,冷藏半小时。
- 拿适量面团,放入挞模里,将面团捏压至挞模边缘,修边。
- 用叉子刺些洞洞在挞上。
- 倒入蛋馅至8分满。
- 送入预热烤箱180度,烘烤20分钟。
- 200g plain flour, 35g parmesan cheese powder, pinch of salt (sifted)
- 40g icing sugar (sifted)
- 125g unsalted butter
- 1 egg york, 1/2 tsp vanilla essence
- (A) 150g water add in 60g fine sugar, boil till sugar dissolved, set aside to cool down completely
- (B) 3 eggs, 50g evaporated milk, Mixed well
- (C) 5g matcha powder, 1 tbsp hot water, mixed well
- Mix (A) and (B) together. Stir well and add in (C). Pass it through the sift for twice.
- To make crust, combine sifted flour and icing sugar.
- Rub in butter until mixture resembles course bread crumbs.
- Add in york and vanilla essense, knead to form a dough. Do not over knead your dough.
- Wrap dough with cling wrap and refrigerate for 1/2 an hour.
- Take a little portion of dough and press dough into tart cases, trim off edge.
- Use a fork to poke holes in the bottom of tart.
- Pour some matcha egg fillings in the tart cases and bake in preheated oven at 180C for 20 minutes or until the custard is set. Leave to cool.
