Orange HawFlakes Cake Lapis



答应做个lapis 给老公的二姐。
送孩子上学后,很懒惰,很想睡,但还是把这门差事给办了。
原本以为2个半钟能收工的,但一面做一面接了几通电话。
口水多过茶,最后还是搞到3个小时10分钟。
没办法睡了;于是就索性把屋子给清洗一番。
觉得自己老了。拖地也觉得很吃力。
最近越来越懒得做家务。
做起来很累,很喘;往往是做了后,想马上倒头大睡。
尤其最近胃又开始不舒服,人也就更没精神的样子。
我看除了烘焙,好像什么都提不起劲了。
哎哟!不可以这样啦!简直是浪费生命; 我的内心在抗议了!
明天会更好的,明天会更好。。。。我相信。

我想问一下,有没有看lapis 看到显呢?
哈哈。。。放心啦,这个以后,应该要到12月才会做了。
因为我老公的姐姐和家人要来这里度假,等她回马来西亚时,我要做一个托她给我送回去给我爸爸,妈妈吃。
到时你们才又会看见我的lapis。
真的不想再敲这么多蛋和罚站3小时来烘烤蛋糕了。

食谱取自食谱取自Bisous À Toi. My Family, Baking, My Life 这里



材料:
  • 300克牛油, 150克细纱糖,5大匙炼奶, 14个蛋黄,1茶匙香草精
  • 120克细纱糖,7个蛋白,1/4小匙塔塔粉
  • 180克低粉,1茶匙发粉
  • 1茶匙橙色素,1茶匙香橙浓缩酱
  • 10小包山楂片
做法:
  1. 牛油,糖,炼奶和香草精打至变奶白色(约10分钟)。
  2. 分次加入蛋黄,拌打至均匀。搁置备用。
  3. 在另一干净盆中把蛋白,糖和塔塔粉以高速拌打至发或硬性发泡,大约5-7分钟。
  4. 把粉料过筛,拌入(2)。
  5. 再把(4)拌入打发的蛋白霜内,拌均。
  6. 把面糊分成两份(每份约600克面糊),一份加入橙色和香橙酱,拌匀。
  7. 另一份保持原味。
  8. 烤炉预热,8寸方盘刷上牛油,放75g的原味面糊,上下火180度,烤大约7分钟。
  9. 然后拿出,稍微用压板轻轻压蛋糕的表面,再放第二层香橙面糊,排上山楂片。用上火烤就好了,每层大概烤个7分钟,或觉得蛋糕表面深色了,就再放一层。(其它还没用到的面糊可以收冰箱,防止出油)。
  10. 第三层放入原味面糊,入烤箱,上火烤7分钟。
  11. 这样继续1层原味面糊1层香橙山楂片面糊至烤完为止(一共16层)。
  12. 最后一层用上下火烤15分钟至上色。 出炉后倒扣放凉。
Ingredients:

  • 300g butter, 150g fine sugar, 5tbsp condensed milk, 1tsp vanilla ess, 14 egg yolks
  • 120g fine sugar, 7 egg whites, 1/4tsp tartar powder
  • 180g low protein flour, 1tsp baking powder
  • 1 tsp orange paste, 1tsp orange coloring
  • 10 small packets hawflakes
Method:

  1. cream butter, condensed milk, sugar and vanilla until creamy, light and fluffy (around 10mins).
  2. Add in egg yolk one at a time, beating until well blended. Leave aside.
  3. In a clean mixing bowl, beat egg whites, tartar and fine sugar until light and stiff peak (about 5-7mins).
  4. Sieve flour and baking powder and fold into (2) butter mixture. Fold in gently till combined.
  5. Add (4) into (3). Continue mixing until well combined.
  6. Divide batter into 2 portions.(about 600g each)
  7. One portion mix with orange paster & orange coloring.
  8. The balance of batter remain original colour.
  9. Grease a 8" cake tin and spread in 75g original batter evenly. Using upper and lower heat at 180C, bake the first layer until light brown (around 7mins).Press lightly with cake press to break any air bubbles and to get an even layer.
  10. Spread 2nd layer with orange batter evenly on top of 1st layer and lined up with hawflakes and turn oven to only upper heat set and grill cake for another 7 mins or until surface is golden brown.
  11. Bake layer by layer alternative between orange and original batter using upper fire (add hawflakes on every orange layer). 
  12. Bake last layer using top and bottom heat and bake the whole cake at 180C for further 15 minutes.

  6. Very beautiful layers and colours. I have never used hawflakes in lapis, how does it taste in the cake? Will it still be crunchy or turned soft?

    Jessie,it turns soft. Like prunes lapis but prunes more moist. This one a bit dry.
