椰浆鸡蛋糕


这几天肚子真的很饱,没有特别想吃的甜食。
但是爸爸说冬天很冷,他的肚子很快就饿了。
所以每天还是努力的找些时间做简单的小食,以防爸爸饿的时候能找到东西吃。
今天出门游玩回来,快快动手做了这小巧的鸡蛋糕。
那么我们的午茶就有着落了。
黑咖啡加蒸鸡蛋糕,再来个昨天做的杏仁牛油蛋糕和中秋月饼;很多很丰富了。
这是个简单容易做的蛋糕,如果没时间的话,这个食谱应该帮得上忙。
只要你的20分钟就可以做出好吃的小甜食,何乐而不为呢?

材料:
  • 1个蛋,1个蛋黄,90克细砂糖(1 egg, 1 yolk, 90g fine sugar)
  • 160克香港粉,1/2茶匙双发粉 (160g hongkong flour, 1/2tsp double action baking powder)
  • 100克椰浆 (100g coconut milk)
做法:
    1. 先把蛋和糖放入碗内, 拌打5分钟至蛋液发大两倍, 成乳白色。
    2. 分次把面粉筛入打发的蛋液中。(蛋液如果正确打发了, 面粉是可以浮在上面, 不下沉的)。
    3. 间中加入椰浆,轻轻拌匀。
    4. 把面糊倒入10个 垫有油纸的蒸杯中。
    5. 蛋糕糊静置的时侯, 可以在锅内烧开水了, 放上蒸架。
    6. 水沸,把容器放入, 盖上锅盖, 用大火蒸10分钟。 蒸好后, 要等1分钟再开盖。
method:

  1. cream egg, yolk and sugar till white and fluffy, about 5-6 mins.
  2. add in sifted flour and baking powder.
  3. add in coconut milk, mixed well.
  4. Pour batter into 10 small cups and steam on high heat for 10 mins.

    1. haha.. this actually not huat kuih. But may be i used double action baking powder so the surface break into flower. Ok, will put in the english version.

    1. 蓝色小厨,这个蒸杯的杯底很小,我一直找不到合适的纸杯,这个是拿普通的纸杯nge nge塞进去的。

    1. Jessica, Hong Kong flour is a highly bleached flour. The extra bleaching makes it whiter and softer, which is preferable in making a lot of Asian doughs because it allows you to roll it thinner without fear of tearing so much. Plus it gives that very white look to the product.

    你好.请问你的香港粉是在Perth 的华人店找到的?包装上面是写着香港粉?Brisbane只找到包粉、高/中/低筛面粉。那么双发粉呢?可在coles/woolworths找到吗?
