Pineapple Rolls (凤梨卷)

Can't remember when i made this pineapple fillings.
It has been sleeping in my fridge for quite sometimes.
Would like to have a go on Sonia's pineapple rolls recipe.
She has mentioned that an interesting ingredient; that is Condensed Milk is added in the pastry.
And i trust that it will definitely turns out good bcoz i trust Sonia.
I only did 1/2 of her portion as i don't have much pineapple fillings.
My dough came out a bit firm and quite difficult to press out from the mould.
My thumb was pain after all the job done.
But.... it turns out really really nice.
The pastry is buttery and it is melted in mouth.
Keep away one box for my mum as she will be here with me next 2 days.
Can't wait to meet my papa too.
Feel so....... happy!!!

Ingredients:
  • 350g pineapple jam
  • 50g condensed milk
  • 190g butter (may be i can add more butter here to make it more creamy)
  • 285g all purpose flour
  • 1 egg yolk
  • 1 egg yolk for egg glaze

Method:

  1. Cream butter and condensed milk till light.
  2. Add in egg yolk beat until fluffy.
  3. Slowly mix in flour till a firm and non-sticky dough form.
  4. Cover the dough and let it rest for 15 minutes.
  5. Put some dough into a Nastar mould and press out into strips about 6cm long.
  6. Place pineapple jam filling on the edge of a strip and make a small elongated roll.
  7. Cut off excess dough, brush with egg glaze.
  8. Bake in preheated oven at 180c for 15-20 minutes or till it becomes golden brown in colours.
  9. Cool on wire racks before storing.

    我也很喜欢凤梨饼。孩子不是很喜欢。
    还好咯,至少我每次做都不用担心没得吃 :)

  4. oh, still doing CNY cookie huh. When I did this, the dough was ok, not too hard, maybe your type of condensed milk and butter are difference brand so it came out with difference texture. Yes, next time you may add more butter if the dough is hard. Glad to know you are going to meet your parents soon, good for you, and have fun..
