覆盆子和蓝莓Friands


昨天大舅和舅母来访。
虽然他们说年纪大了吃量越来越小,但我还是为他们准备了下午茶。
幸好午餐只是吃简单的沙拉,所以简单的午茶应该不是问题。
舅舅和舅母都吃得简单健康,
所以我想了又想最后决定做个小米豆浆,娘惹apam balik 和西式friands.
选择小米豆浆因为它肯定比咖啡有益。
选择 apam balik 因为印象中舅母好像喜欢这糕点;可是椰浆就得以鲜奶来替代了。
选择 friand 因为它只用蛋白不用蛋黄,而且做法简单。
这样的“菜单”应该还可以吧?
从教堂回家后,老公就到酒店接舅舅。
我手忙脚乱的准备我的糕点。
虽然我只有1小时的时间,但还好我有两个apam 模,所以很快就把糕煎好。
接下来就做friands, 烘烤前他们就到了。
从不知到1小时过得这么快。
虽然和时间赛跑但我自己还相当满意做出的糕点。

Apam balik 食谱参考这里

覆盆子和蓝莓 Friands

  • 100克溶化牛油
  • 4个蛋白
  • 40克低筋面粉
  • 90克糖粉
  • 90克杏仁粉
  • 适量蓝莓和覆盆子
  1. 预热烤箱170度,把 friand模涂上少许牛油,方便脱模。
  2. 把蛋白稍微打至起泡,约30秒。
  3. 把面粉,糖粉和杏仁粉筛入蛋白内,搅拌均匀。
  4. 慢慢加入牛油,拌匀。
  5. 把面糊倒入6个模内,放上蓝莓和覆盆子。
  6. 送入烤箱,烤25分钟直熟。取出friand模待冷5分钟,再把蛋糕小心取出。
  7. 乘热享用。

Ingredients:

  • 100g butter (melted)
  • 4 large g whites
  • 40g low protein flour
  • 90g pure icing sugar
  • 90g almond meal
  • some blueberries n rasberries

Method:

  1. Preheat oven to 170 degrees Celsius. Adjust the oven rack to the middle position so the friands brown evenly.
  2. Grease a six hole non-stick oval friand。
  3. Melt butter and set aside to cool to lukewarm.
  4. In a clean bowl, beat egg whites with a fork or whisk until foamy (about 30 seconds).
  5. Sift flour, icing sugar and almond meal into the bowl with the egg whites. Stir ingredients together until just combined.
  6. Add the melted butter to the bowl and stir until just combined.
  7. Divide mixture evenly among the holes of the prepared pan. Place blueberries/rasberries in a cluster in the centre of each friand.
  8. Bake for about 25 minutes, or until the friands are a light golden colour and spring back when lightly pressed.
  9. Remove friands from the oven and allow to stand in the pan for five minutes.
  10. Run a knife around the outside of each friand to loosen before turning them out. Serve warm。

  4. Friands 跟普通蛋糕有什么分别? 每次食谱都会看到, 但是不懂它的口感是怎样的。 不过那个形状好可爱, 我喜欢!

    Min, 觉得是天使蛋糕和之间的蛋糕。很香因为有牛油和杏仁粉;但是冷后会较蛋糕硬,所以温温吃最好。撒上糖粉,配上冰淇淋或鲜奶油最棒.
