昨天大舅和舅母来访。
虽然他们说年纪大了吃量越来越小,但我还是为他们准备了下午茶。
幸好午餐只是吃简单的沙拉,所以简单的午茶应该不是问题。
舅舅和舅母都吃得简单健康,
所以我想了又想最后决定做个小米豆浆,娘惹apam balik 和西式friands.
选择小米豆浆因为它肯定比咖啡有益。
选择 apam balik 因为印象中舅母好像喜欢这糕点;可是椰浆就得以鲜奶来替代了。
选择 friand 因为它只用蛋白不用蛋黄,而且做法简单。
这样的“菜单”应该还可以吧?
从教堂回家后,老公就到酒店接舅舅。
我手忙脚乱的准备我的糕点。
虽然我只有1小时的时间,但还好我有两个apam 模,所以很快就把糕煎好。
接下来就做friands, 烘烤前他们就到了。
从不知到1小时过得这么快。
虽然和时间赛跑但我自己还相当满意做出的糕点。

覆盆子和蓝莓 Friands
- 100克溶化牛油
- 4个蛋白
- 40克低筋面粉
- 90克糖粉
- 90克杏仁粉
- 适量蓝莓和覆盆子
- 预热烤箱170度,把 friand模涂上少许牛油,方便脱模。
- 把蛋白稍微打至起泡,约30秒。
- 把面粉,糖粉和杏仁粉筛入蛋白内,搅拌均匀。
- 慢慢加入牛油,拌匀。
- 把面糊倒入6个模内,放上蓝莓和覆盆子。
- 送入烤箱,烤25分钟直熟。取出friand模待冷5分钟,再把蛋糕小心取出。
- 乘热享用。
Ingredients:
- 100g butter (melted)
- 4 large g whites
- 40g low protein flour
- 90g pure icing sugar
- 90g almond meal
- some blueberries n rasberries
Method:
- Preheat oven to 170 degrees Celsius. Adjust the oven rack to the middle position so the friands brown evenly.
- Grease a six hole non-stick oval friand。
- Melt butter and set aside to cool to lukewarm.
- In a clean bowl, beat egg whites with a fork or whisk until foamy (about 30 seconds).
- Sift flour, icing sugar and almond meal into the bowl with the egg whites. Stir ingredients together until just combined.
- Add the melted butter to the bowl and stir until just combined.
- Divide mixture evenly among the holes of the prepared pan. Place blueberries/rasberries in a cluster in the centre of each friand.
- Bake for about 25 minutes, or until the friands are a light golden colour and spring back when lightly pressed.
- Remove friands from the oven and allow to stand in the pan for five minutes.
- Run a knife around the outside of each friand to loosen before turning them out. Serve warm。

Min, 觉得是天使蛋糕和之间的蛋糕。很香因为有牛油和杏仁粉;但是冷后会较蛋糕硬,所以温温吃最好。撒上糖粉,配上冰淇淋或鲜奶油最棒.
