Sayur Lodeh with Ketupat (Lontong)

Sayur Lodeh with lontong or ketupat is one of our family's favourite one-dish-meal.
It is so called simple if you can prepare the chilli paste one day ahead.
My husband loves vegetables. He enjoys this meal so much.
Normally for making my cooking easier, i will just use Hai's lontong paste and add in some fresh ingredients like lemongrass, dried shrimps, turmeric and galangal to the paste.
It turns out good too.
But today i am keen to have a try on 3 hungry tummies nanny's recipe.
It is cool! Delicious!
Unfortunately i dont have long beans and eggplants.
But overall it is really good, especially the gravy.
Just can't stop until finished everything in the bowl.

the curry paste can serves 6 to 8
  • 10 dried chillies, soaked in hot water til soften, seeds removed
  • 3 red chillies, chopped
  • 6 candle nuts (macadamia nuts and brazil nuts are good substitute)
  • 4 garlic cloves
  • 6 shallots (150 g), chopped
  • 1.5 tbs of turmeric powder (i used fresh turmeric)
  • 1 cm piece of shrimp paste, toasted
  • 30 g of dried shrimp, soaked in hot water and chopped
  • a 5 cm knob of ginger
  • a 5 cm knob of galangal
  • 2 lemongrass (white parts only), chopped
Others Ingredients:
  • 2 large carrot, peeled and cut into 5 cm strips
  • 1/2 cabbage, cut into pieces
  • 6 pcs of fried tofu, halved
  • 6 hard boiled eggs, halved
  • 1 x 400 ml coconut milk
  • 2 cup of stock
  • 3 kaffir lime leaves
Method:
  1. Prepare the vegetables and tofu.
  2. Prepare the curry paste, blend everything to a fine paste.
  3. Saute curry paste til oil separates.
  4. Add coconut milk, stock and kaffir lime leaves and bring it to a boil.
  5. Add in the vegetables gradually and cook til tender. Seasons at your own taste.

  1. I have all the ingredients at home now except tofu, ok, tomorrow I going to cook this one dish meal, by the way, I dont see you add Ketupat in your recipe?
