I had a piece of almond orange cake last saturday while having coffee with my husband at David Jones.
It was so yummy that i decided to make it by myself for tomorrow "get-together".
This is a lovely moist cake with strong orange flavor.
This classic flourless orange cake is definitely makes a warm welcome to friends who stop by for afternoon tea.
A simple ingredients and a simple way of making but taste better than any others.
I love to chill it before serve but to serve with warm thickening cream.
Recipe modified from The Gluten-free Kitchen by Sue Shepherd
Ingredients:
- 2 oranges
- 4 eggs
- 180g caster sugar
- 200g almond meal
- 1tsp baking powder
- Icing sugar for dusting after baking
Method:
- wash oranges and place unpeeled, in a pot of boiling water for 2 hours. Drain the water and allow the oranges to cool. This can be done ahead of time.
- Preheat oven to 180°C.
- Break eggs into a mixing bowl or blender. Add caster sugar and blend together.
- Place the 1 1/2 oranges into the egg mix. Break up the oranges and then blend together to a smooth consistency.
- Add the almond meal and baking powder and blend.
- Grease a 18cm spring form baking pan with margarine.
- Pour batter into the pan and bake for 45 minutes then cover top of cake with aluminium foil and continuing bake for 15 minutes or until well cook.
- Dust with icing sugar to serve.

dont think my kid will like almond meal, this is adult's cake, look like i have no chance to try this, maybe I should replce it with cake flour.

Sonia, the almond meal smell good. I love it. So as my kids :)
After adding the oranges, cant actually have strong smell for almond meal. Dont worry.
Mr & Mrs Bee, almond meal, almond flour or ground almond is made from ground sweet almonds. Almond flour is usually made with blanched almonds (no skin), whereas almond meal can be made both with whole or blanched almonds. You can easily get fr any supermarket.
