两个土司都合我心意。看到顶盖四方的土司最开心了。
做完橘子戚风还下剩下橘子汁和茸就拿来做这土司。
烘烤出炉的土司带着清香的橘子味,显得好有格调。
刚刚把剩下的1/4切成两片厚厚的包包,涂上厚厚的奶油撒上糖和比萨芝士,烤10分钟后就可以吃到好好吃的包包了。
至于枫糖葡萄干土司是想送给朋友的但最后也变成自己的囊中物了。
两个土司用了同样配方,只是稍微做了些许更改。
材料:
- 300克 高粉,25克糖,4克酵母,4克盐,100克 水,80克橘子汁, 1大匙橘子果酱
- 20克牛油, 1大匙橘子茸
- 所有材料,除牛油和橘子茸外,依序加入盆內,用低速搅拌成面团。
- 加入牛油,然後用高速搅打约10分钟。
- 打到面筋擴展,就是面团可以拉成薄膜狀即可。
- 加入橘子茸揉匀,蓋好,放在溫暖处发酵1小時。
- 发酵完成后会膨胀双倍大,用手指按下去;凹处会浮起表示面团发的刚刚好。
- 排气后分割成2份。每份250克。 滚圆休面15分钟(今天的面包共重550克,剩下50克做了个小面包)。
- 分別将2个面团杆成与烤模同宽的长方形。
- 将2个面团叠上,稍微拉整齐,再杆平整。
- 将面团由一侧紧密卷起,收口朝內朝下放入烤模中(20cmX10cmX10cm)一边,表面喷些水再发酵1个小时至8-9分滿,盖上土司盖。
- 放入预热烤箱190度,烘烤35-40分钟。
- 烤好的土司从土司模中倒出来在架子上放凉。
Ingredients:
- (A) 300g high protein flour, 25g, 4g yeast, 4g salt, 100g water, 80g mandarine juice, 1tbsp marmalade jam
- (B) 20g butter, 1tbsp mandarine zest
Method:
- Mix all ingredients (A) together at low speed to form a smooth dough.
- Add in butter and continue kneading to form a smooth, elastic and can stretch into thin sheet.
- Add in mandarine zest and knead evenly into dough.
- Place into a big bowl, cover with damp cloth and leave to prove until double size.
- Take out the dough and knead again til smooth.
- Divide into 2 doughs (250g each) and shape it into balls. Rest for 10 mins.
- Roll out dough into long rectangle shape and roll in tightly like swiss roll.
- Arrange the dough into a 20cm x 10cm x 10cm loaf tin.
- Leave to prove for untill 90% of the loaf tin.
- Cover the lid and bake in preheated oven at 190C for 35-40mins til golden brown.
- Take out and overturn the toast immediately once it comes out from oven.
- Cool completely before slice.

ReplyDelete星,470-500克的面团足够做顶盖。面团发至8-9分满才送入预热烤箱,肯定做到顶盖。试试看吧。

ReplyDeletemommy of 3, no trick lei. What i can advise is only slice it when it is completely cold. Practise makes perfect. I am actually still practising very hard to get a thiner n even slice :)
