橘子土司 (Mandarine Toast)

昨天做了两个土司。一个是橘子土司。另一个是枫糖葡萄干土司。

两个土司都合我心意。看到顶盖四方的土司最开心了。

做完橘子戚风还下剩下橘子汁和茸就拿来做这土司。

烘烤出炉的土司带着清香的橘子味,显得好有格调。

刚刚把剩下的1/4切成两片厚厚的包包,涂上厚厚的奶油撒上糖和比萨芝士,烤10分钟后就可以吃到好好吃的包包了。

至于枫糖葡萄干土司是想送给朋友的但最后也变成自己的囊中物了。

两个土司用了同样配方,只是稍微做了些许更改。

材料:

  • 300克 高粉,25克糖,4克酵母,4克盐,100克 水,80克橘子汁, 1大匙橘子果酱
  • 20克牛油, 1大匙橘子茸
做法:
  1. 所有材料,除牛油和橘子茸外,依序加入盆內,用低速搅拌成面团。
  2. 加入牛油,然後用高速搅打约10分钟。
  3. 打到面筋擴展,就是面团可以拉成薄膜狀即可。
  4. 加入橘子茸揉匀,蓋好,放在溫暖处发酵1小時。
  5. 发酵完成后会膨胀双倍大,用手指按下去;凹处会浮起表示面团发的刚刚好。
  6. 排气后分割成2份。每份250克。 滚圆休面15分钟(今天的面包共重550克,剩下50克做了个小面包)。
  7. 分別将2个面团杆成与烤模同宽的长方形。
  8. 将2个面团叠上,稍微拉整齐,再杆平整。
  9. 将面团由一侧紧密卷起,收口朝內朝下放入烤模中(20cmX10cmX10cm)一边,表面喷些水再发酵1个小时至8-9分滿,盖上土司盖。
  10. 放入预热烤箱190度,烘烤35-40分钟。
  11. 烤好的土司从土司模中倒出来在架子上放凉。

Ingredients:

  • (A) 300g high protein flour, 25g, 4g yeast, 4g salt, 100g water, 80g mandarine juice, 1tbsp marmalade jam
  • (B) 20g butter, 1tbsp mandarine zest

Method:

  1. Mix all ingredients (A) together at low speed to form a smooth dough.
  2. Add in butter and continue kneading to form a smooth, elastic and can stretch into thin sheet.
  3. Add in mandarine zest and knead evenly into dough.
  4. Place into a big bowl, cover with damp cloth and leave to prove until double size.
  5. Take out the dough and knead again til smooth.
  6. Divide into 2 doughs (250g each) and shape it into balls. Rest for 10 mins.
  7. Roll out dough into long rectangle shape and roll in tightly like swiss roll.
  8. Arrange the dough into a 20cm x 10cm x 10cm loaf tin.
  9. Leave to prove for untill 90% of the loaf tin.
  10. Cover the lid and bake in preheated oven at 190C for 35-40mins til golden brown.
  11. Take out and overturn the toast immediately once it comes out from oven.
  12. Cool completely before slice.

  2. 星,470-500克的面团足够做顶盖。面团发至8-9分满才送入预热烤箱,肯定做到顶盖。试试看吧。

  8. mommy of 3, no trick lei. What i can advise is only slice it when it is completely cold. Practise makes perfect. I am actually still practising very hard to get a thiner n even slice :)
