Chicken & Century Eggs Congee

Really do not know what to cook for dinner.
This is always my problem.
I just wanted to sleep some more. Lazy to move.
A pot of congee click my mind.
The most simple one, I think.
My children love congee especially chicken congee with century egg (They call it jelly egg)
Century congee is a must everytime we have our dim sum.
Since i still have 2 century eggs and 1 salted egg on hand given by Vivian before she fly back, so i decided to cook this for our dinner.
A simple one but everyone enjoy it!

Ingredients:
  • 1 cup of jasmine rice
  • 200g shredded chicken
  • 4 cups of chicken stock (depends of how soft u like or u can just follow the rice cooker instruction)
  • 3 dried scallops (soak for 1 hrs n sliced)
  • 2 century eggs, peeled and cut into small cubes
  • 1 salted egg, hard boiled, peeled and cut into small cubes
  • 1 stalk of spring onions, finely chopped
  • ginger, finely sliced
  • dash of sesame oil

Method:

  1. Wash jasmine rice and put the stock and dried scallops into rice cooker and cook till soft.
  2. Add in pinch of salt and pepper if desired.
  3. Add in shredded chicken, salted egg and century eggs.
  4. Scoop congee into serving bowls. Garnish with spring onions and ginger slices. Add some sesame oil and served hot.

  8. Yes Jane, my mil do the cooking during weekday, occasionally weekend if she is at home. I seldom cook since kitchen used to be her territory but now I will cook occasionally during Sunday if we are at home but cooking is tedious since I am not good at tat but I am learning, I still prefer baking cos it wont make me sweat hahaha...
