柠檬方块塔 (LEMON SQUARE)


谢谢min的食谱
这个柠檬方块塔实在是好棒!
其实它就和早前做的柠檬莱姆塔相近。
只是做法有点不同。
觉得这个的做法容易剩工多了。
如果你也喜欢酸酸甜甜的口味,那不妨试试这个。
绝对不会让你失望。
原食谱取自dailydelicious
饼皮:
  • 牛油 85g, 冷冻
  • 面粉 110g
  • 糖粉 45g
  • 盐 1/4tsp
内陷:

  • 2个蛋
  • 100克细糖
  • 1 1/2大匙面粉
  • 1/8 小匙盐
  • 85克柠檬汁
  • 2大匙鲜奶油
  • 糖粉 (撒在上面装饰)
做法:
  1. 准备一个18cm的正方形烤盘, 抹油。
  2. 把牛油刨成丝状,可以用刨芝士器(cheese grater)
  3. 把面粉, 糖粉还有盐在容器拌匀。
  4. 加入牛油块, 用叉子把他们混合, 直到成为类似小粒状。
  5. 把它们放入烤盘,压平。
  6. 放进冰箱冷冻15分钟。
  7. 取出, 用180'C 烤大概16-18分钟, 取出备用。
  8. 准备内陷, 把蛋, 细糖, 面粉和盐搅拌均匀。
  9. 加进柠檬汁和鲜奶油。
  10. 把蛋糊倒入饼皮上, 用160度烤约18分钟。
  11. 取出待凉后才切片, 然后再撒上糖粉。
Ingredients:
For the crust:

  • 85g unsalted butter, frozen plus more for dish
  • 110g all-purpose flour
  • 45g confectioners’ sugar
  • ¼ teaspoon salt
for the filling:
  • 2 large eggs, lightly beaten
  • 110g granulated sugar
  • 1½ tablespoons all-purpose flour
  • ⅛ teaspoon salt
  • 85g fresh lemon juice
  • 2 tablespoons whipping cream
  • Confectioners’ sugar, for dusting
Method:
  1. Preheat oven to 180°C. Butter 18cm square pan and line with parchment paper.
  2. Make crust: Grate butter on a cheese grater with large holes; set aside. Whisk together flour, confectioners’ sugar, and salt in a large bowl. Add butter; stir with a wooden spoon until combined and mixture looks crumbly.
  3. Transfer mixture to prepared dish; press evenly onto bottom with your hands.
  4. Freeze crust 15 minutes.
  5. Bake until slightly golden, 16 to 18 minutes, Leave the oven on but change the temparature to 160C.
  6. Meanwhile, make filling: Whisk together eggs, granulated sugar, flour, and salt in a bowl until smooth. Stir in lemon juice and whipping cream.
  7. Pour the egg mixture over hot crust and bake until filling is set and edges are slightly golden brown, about 18 minutes.
  8. Let cool slightly on a wire rack.
  9. Lift out; let cool completely on a wire rack before cutting into squares.
  10. Dust with confectioners’ sugar.
  11. Lemon squares can be refrigerated in airtight containers up to 2 days.

    看到你和Min做搞到我心痒痒。

    其实之前有bookmark一个在joyofbaking看到的recipe,柠檬也买了,不过最后没有做,把柠檬用在其他蛋糕了。
