香兰冰皮迷你月饼 (Pandan Snow skin mini moon cake)

明天要去朋友家聚会。该做什么呢?想来想去都没有个头绪。
最后是把剩下的白莲蓉馅做成这冰皮月饼。
没有加色素的香兰冰皮好像不大出色。
不过胜在拥有淡淡的清香味。
希望她们会喜欢。

材料:
A:100g 糕粉,120g 糖粉
B:32g 白油
C:120ml 香兰叶汁 (6片香兰叶加120ml 冷水,搅打成汁,过滤)

馅料:
白莲蓉馅512g(搓圆,每份32g)
皮料做法:
  1. 材料A筛入一个大碗,加入B料搅匀。
  2. 倒入C料搅成软团,分16等份,每份约22g
  3. 将做法(2)按扁,包入馅料,收紧
  4. 放入撒了糕粉的月饼模,敲出。重复做完)做好后放入冰箱冷藏即可。

Snow Skin
100g Koh fun (commercial fried glutinous rice flour)
120g Icing sugar
32g Shortening
120g Cold pandan juice (6 screw pine leaves add with 120ml cold water, blend together and sieved to get juice)

Fillings
512g white lotus paste (divide into 16 portion, 32g each)

Method:

  1. Sift Koh Fun and Icing sugar into a mixing bowl.
  2. Rub shortening into the flour mixture.
  3. Gradually mix in cold pandan juice and mix to form a soft dough.
  4. Scale and weigh 22g per portion for each mooncake. (According to the size of your mooncake mould.)

Assemble

  1. Wrap each portion of filling with a portion of snow skin.
  2. Press into mooncake mould.
  3. Knock out and chill before serving.

  4. Snowskin mooncakes are my fav, especially pandan... Haha...

    For the cold water, just want to check:
    (1) cold as in water taken out from refrigerator OR
    (2) cold as in water at room temperature

  6. cake flour is it multipurpose flour or glutonous rice flour ( the 3 elephant brand one) and must fry it? for how long?TQ

    mimimama, 糕粉Koh fun (commercial fried glutinous rice flour)is not cake flour or multipurpose flour or glutonous rice flour. It is cook glutinous flour. Sell ready in packet. Can be used directly; no need to fry (是一种加工粉(又名潮州粉),主要由糯米粉炒熟后磨成的细粉)

    cheezyHeart, bought fr internet. not really need to press hard. Actually quite handy and useful but still wood mould is the best.
