南瓜牛油蛋糕

又是40度!我真的差点被烤熟了。
为什么可以这么热的????我真的摸不着脑。
一个人在家又不想开冷气浪费电,可是那个风扇好像也在吹热风,
感觉就好像拿着吹风筒在向着自己的身体吹一样。
怪不得老公常常说,夏天走在街上好像走在烤炉里;整个城市都启动着烤箱。
冬天呢,就好比走在冷气房里,到处都开了冷气。
不过,给我选择的话,我宁愿选冷都不要热。
我想,在热带国家生长的朋友都会和我一样
一早就和孩子说好晚餐吃粥,所以空闲多了。
煮了一大锅薏米水解暑,再来做个简单的牛油蛋糕。
这个南瓜牛油蛋糕从Sonia家搬过来的。
那天看见就心思思,一直想动手,今天果然如愿了。

材料:

  • 200克无盐奶油
  • 180 克幼糖
  • 1 /4 茶匙香草精
  • 5个蛋
  • 300克低筋面粉,1茶匙双发粉(过筛 )
  • 200克金瓜泥 (金瓜蒸熟,乘热用叉子压烂,待凉备用)
  • 适量南瓜籽

做法:

  1. 将牛油和糖打至松发。

  2. 加入鸡蛋,一次一个,搅拌均匀。

  3. 加入香草精拌匀。

  4. 分次加入过筛的面粉和双发粉,拌匀。

  5. 最后加入金瓜泥,轻轻搅拌匀。

  6. 倒入铺上烤纸的8寸方盘,撒上南瓜籽。
  7. 预热烤箱180度,烘烤50分钟或至熟透即可。

Ingredients:

  • 200gm butter
  • 180gm fine sugar
  • 1/4tsp Vanilla essence
  • 5 large eggs
  • 300gm low protein flour sifted together with 1 tsp double action baking powder
  • 200gm soft steamed pumpkin flesh (use a fork to mash it)
  • Handful pumpkin seeds

Method:

  1. Beat butter and sugar until light and creamy.

  2. Add in vanilla essence, beat till combined.

  3. Add in eggs one at a time, beating well after each addition.

  4. Add in sifted flour, 1/3 at a time, on low speed then beat until well combined.

  5. Mixed in mash pumpkin and stir well until well combined。

  6. Pour batter into lined 8” square baking pan and sprinkle with pumpkin seeds.

  7. Bake in a pre-heated oven at 180c for 50 minutes or until done when tested with a skewer.

  3. Like yourself, I much prefer cold weather than the humid weather here. Burning HOT! Which part of Aust are u at Jane?When we were at Perth, it was breeze cool. I love the country side so much so that I wanna migrate over. Let's move to some cold country and be neighbors ;)
    I like any form of butter cake, will like to try pumpkin too. Your cake looks good! Happy baking!

  4. 又40C 澳洲很热,比马来西亚还热,这是我的感觉。 还好悉尼“最近”都比较好了,还下雨呐。那个Butter Cake我也是看了Sonia做后想做,但这两天老公不在,我就暂时懒懒一下,加上还没买金瓜

  6. Wow, super hot 40c, I can not imagine how to survive at this kind of hot weather! Yesterday my place about 33c, I already tak boleh tahan !
