Pork and fennel sausage rolls

The Best sausage rolls!!!! Best best best best best!!!!!

Recipe adapted from Bourke street bakery by Paul allam & David macguinness

2 tablespoons extra virgin olive oil
6 garlic cloves finely chopped
2 teaspoons ground fennel (I fried the fennel seed n blended into powder form)
4 thyme sprigs, leaves picked
1 big brown onion, finely chopped
150grams celery (I added some red capsicum )
150grams carrot finely chopped
1.2 kg of minced pork
40grams breadcrumbs
1 tablespoon salt
1 teaspoons black pepper
puff pastry (about 6 sheets if store brought)
egg wash (1 egg and 1/4 cup of milk n a pinch of salt)
fennel seeds for sprinkling

Method:
- heat oil in pain over medium heat. Add onion and garlic and cook till fragrant. Add thyme, carrot, capsicum and celery and stir until soften. Plate out and let it cool.
- Mix pork mince, vegetables, crumbs, salt and pepper in mixer. Blend until the meat becomes gluey.
- Lay the puff pastry sheet and put mixture on the puff pastry sheet and roll up. Dab the ending edges with egg wash. Repeat until mixture is used. Bake in a pre heated oven at 190 degrees for about 35-40 minutes.

When my husband told me that he wanted to sell our current house & buying a bigger house, I told him, if you think you can afford it, do it but the home mortgage should not be more than 40% of his total income! Actually I don't mind to live in my current place,at least no need to pack & unpack mah, hai!

Thought that you only "talk talk" only when you said that it would be perfect if you make the Pork & Sausage Rolls. You did! The sausages look very cute! You used 1kg meat, walau, I only used 300g & we got sick after having them in 2 meals in 1 day!

Ya, I am actually very scared of mortgage. Temporary already got 2 house loan to served. If add one more than I will be very tight Lo. The best thing is my husband don't want to let go the current one. I really feel crying. But since the offer declined so I can shop again. Hehe...

  3. Jane they look yummy, now I know what to make for Friday fellowship. Is the texture of the filling smooth n creamy as you blended all ingredients? How many pieces have you divided from a pastry sheet? I am not sure what you are going through right now, but would like to encourage you that God's grace is always sufficient for us, May u have peace in Him!

    1. siew, not the same. croissant needs yeast to proof while puff pastry contains no yeast.

  9. Hi Jane, thanks for sharing the recipe, compliment from son and friends though the pastry was a bit soggy. Can you please advise where gone wrong? Thanks.

    1. teckbaked, may be the puff pastry is not properly baked. I like to use buttery puff pastry which i feel it can raised more compare to the normal one. Another thing is by using puff pastry u need to handle it fast so that it can have good end result. If ur oven temperature is a bit low than u can increase it by 10-20C or bake at 210C for first 10mins then changed to 190C for balance of baking time. The ready baked sausage rolls should be brown and a bit hard at the bottom n puffy on top.
ANyway, the humidity of the weather do influenced the texture and make it soggy.
Hope my tips did help u :)

  10. Thanks Jane, I think my oven temperature is not hot enough cos I baked four tray and the sausage is too closed to each other. I try the second time, only two sausage roll per tray, came out right this time. I also bought Bourke street bakery online at a discount price and try the puff pastry, it was nice but after baking, there are so much oil in the tray.
