渔网面包,咖喱鸡(Roti Jala & Curry Chicken)



下了几天的雨,我完全不想出门。
可以躲在被窝里睡大觉是最好不过的。
儿子连续吃了几天的面食,想念白饭了。
我只好去超市买了一些肉回来。
心想这样的天气最好是吃咖喱鸡了。
我女儿马上有反应。
她很喜欢吃咖喱的,尤其日本咖喱。
她说,妈咪,可以做那个roti prata吗?
哦。。错了,应该是roti jala。她经常都搞错,所以必须问清楚。
每次我煮咖喱,她一定会想念那个“网”
还好roti jala不难做,容易成全。
再买个长长的Turkish Bread回来,可以沾咖喱酱吃,很好吃的。
我自己很喜欢,也希望大家会喜欢。

Ingredients:

800g chicken thigh and wings 

4 potatoes
3 tbsp oil
125 ml thick coconut milk (1 used 3tbsp milk powder add with 1/2 cup milk)

Marinade:
1tbsp curry powder, 1tbsp light soy sauce


Spice Paste:
250 g shallots, peeled
20 g garlic, peeled
20 dried chillies, soaked in warm water to soften
6 red fresh chillies

5 candlenuts
1 tsp toasted belacan powder
**additional 1tbsp A1 meat curry paste 
(ground all ingredients (except belacan and A1 curry paste into) a paste with a food processor)

Seasonings:
1 tsp salt
1 tsp sugar
1 tbsp light soy sauce


Method:
  1. Mix chicken with marinade in a bowl. Cover with cling film and marinate for an hour.
  2. Heat up the oil in a wok and saute spice paste together with belacan until fragrant. 
  3. Add in A1 curry paste and fried for 2 mins. 
  4. Add the marinated chicken and stir-fry until aromatic. Add in 2 cups of water and seasonings. Continue cooking for 15 minutes. Add in potatoes and continue cooking until chicken and potatoes are cooked.
  5. Pour in coconut milk and bring to boil. Dish up and serve  warm.

Roti Jala:
  • 1 cup plain flour, 3/4 cup water, 1/2cup milk, 1 egg, 3 tbsp melted butter, pinch of salt, 1tsp turmeric powder
Method:
  1. Combine all the ingredients and whisk until the batter is smooth and free of lumps. Strain the batter.
  2. Heat a non-stick pan over medium low heat.
  3. Fill the mould with some batter, and make few mini-swirls in the pan until it forms a large “net” pancake.
  4.  Pan fried until the pancake is set.
  5.  Remove from the pan and roll them up. Repeat the process until finished.
  6. Serve warm with curry.

    1. 娴,为了做两个颜色,我真的是七手八脚。还好面糊很好做,适应了就容易咯。还是要去买那个罐才容易做。

  6. I just made roti jala and chicken masala curry few days ago, it was well received by my family. Especially the chicken masala curry which i adapted from Love2cook blog, it was really delicious..Also i try with a new toy to make the net, a plastic bottle with 3 holes, too bad, i only have one bottle, otherwise i can make two tone colours like you and as seen in Masam Manis blog..Your roti jala and curry chicken look also very good wor.

    1. Sonia, I want to cook chicken masala to celebrate merdeka with friends n since u recommend this blog n I will try it out. Ya, I also follow the masam manis style by doing 2 tone of colors but too bad I don't have the bottle so it was a mess! Anyway I already ask my sis in law to buy me the bottle as she will be visiting me in few weeks time.
